From ice kacang to matcha gelato

This is the modest ice kacang (a type of shaved ice dessert) stall my grandparents started, and that my aunts and parents helped run, almost 50 years ago in Singapore.

 

Before the age of foodie blogs and instagram, it achieved a dedicated following in its time with crowds of lunchtime workers and after-school kids looking for some sweet respite from the sweltering heat of Singapore.

This is the modest ice kacang (a type of shaved ice dessert) stall my grandparents started, and that my aunts and parents helped run, almost 50 years ago in Singapore.

 

Before the age of foodie blogs and instagram, it achieved a dedicated following in its time with crowds of lunchtime workers and after-school kids looking for some sweet respite from the sweltering heat of Singapore.

Ice kacang in its simplest sense, is a dessert of shaved ice topped with sweet red bean, preserved fruit, jellies and syrups. What made this humble dessert shine was my grandparents’ dedication to detail and taking no short-cuts. My ah gong (aka grandpa) would diligently sharpen the ice shaver’s blade to ensure only the fluffiest snow-like texture was allowed from the block of ice.

 

There was also no compromising on the quality of their ice kacang toppings, many of which were laboriously made from scratch and cooked to perfection. Just as important was their generosity with the toppings to provide a truly flavourful and satisfying experience.
